100% Monastrell - D.O. Jumilla
Olivares winery started producing Monastrell back in 1930, they still harvest by hand and use autoctonous yeast to preserve the Monastrell's character. On the nose succulent dark berry preserve and candied blueberry, with hints of violet and smoked meat adding complexity. On the palate sweet and expansive but focused, with tangy acidity buffering the blackberry and blueberry flavours. Excellent depth and lingering spicyness.
Pair with desserts made with dark chocolate and berry ganache, also with fig and blue cheese tarts or endive with blue cheese, grapes and candied walnuts.
