100% Pedro Ximenez - D.O. Montilla - Moriles

A unique estate grown Pedro Ximénez (PX), made from a single vintage instead of the usual solera system (different years blended).  Rich amber resin in colour, this wine is made by drying Pedro Ximénez grapes out on mats in the sun, then ageing them in oak barrels. Unusually for a PX, this wine is unfortified, and as such full of unadulterated PX character.  A nose of orange zest, tea, caramel and spice gives way to a panettone-esque palate of candied fruits, sultanas, brioche and rosemary honey. Clean, light and superbly stylish.  

Drink it with caramel nut tart, creamy blue cheese or any fruit based desserts. The best way of bringing intense Andalusian summer sun to your table.  Serve chilled.
