This Oloroso sherry has been aged for more than 10 years in oak barrels from the Solera System  where no "flor"  (natural yeast) develops. In this wine, the Pedro Ximenez reveals a less well-known aspect of its character, and its sweetness is an extraordinary traverse of the boundary between sweet and dry wine.
Deep, raisin intense aromas and dry to very dry flavour. Silky, soft on the palate with a dry, long, graceful finish associated with lengthy cask ageing.
Dry Oloroso Asunción is a very versatile wine: as an aperitif with Iberico cured meats, roasts with game such as roasted venison with caramelised onions and mushrooms, but also as an after-dinner with a platter of cured cheeses or with desserts that are not excessively sweet such as nut or roasted fruit tarts or dark chocolate mousse.  Try it with a good cigar!
