Jiménez-Landi Bajondillo is a red wine produced by the Jiménez-Landi in the Méntrida region. Jiménez-Landi is located in the town of Méntrida (Toledo), an area with a century old tradition in viticulture. The aim of the winery is based on viticulture that is respectful to the environment and the use of the Garnacha grape, a native variety to the region.
The harvest is carried out manually in small boxes. As for production, after being destemmed, the must ferments in steels tanks for 15-30 days. After vinification, the wine passes through an ageing period of 6 months in French Oak barrels.
To maintain the character of the wine, it is neither filtered, clarified, not established in the cold.
