Denomination: Chianti DOCGVariety: Sangiovese 90%, Canaiolo Nero 7% and Colorino 3%
Soil: Lime and Marl with some clay - fertile with good mineral content
Vinification: After harvest, the grapes are fermented in stainless steel tanks at a controlled temperature. Maceration lasts for 3 weeks.Agening: The wine is aged for three years in big wooden barrels. The it is aged in bottle before release.

TASTING
Nose: The nose of this Chianti shows varietal aromas with floral tones with cherry-like fruit and delicate aromas from ageing the wine in large wooden barrels.
Taste: An elegant Chianti Riserva with an opening of cherry and red fruit which is woven together by subtle mineral shadings and a delicate herbal touch. In the mid palate there are some dry tobacco tones. The wine is defined by its elegant architecture, lively acidity and a fine tannins.
Pairing: Pasta, vegetable based dishes, antipasti, red meats and cheeses.

Grati Vineyard:
The Grati family own a magnificent hill of vines on the western side of the Rufina valley just outside the town of Rufina where part of their cellars are located. Gianfranco, daughter, Cristiana, and son, Gualberto, are the current generation running the business. The Rufina valley makes sangiovese wines of real distinction, close in quality to those from the Classico district south of Florence, but the style is slightly different as the vines are cooled by the breezes which come down the Sieve valley. They represent great value which is why Grati's wine is chosen for The Society's Chianti Rufina. The family are also famous for the quality of their olive oil.
